Red Prawns Marinated in Soy Sauce and Sesame Oil
on Orange and Red Onion Compote
Ingredients
Red prawns size L n°12
Mixed crunchy seeds to taste
Soy sauce to taste
Sesame oil to taste
White pepper to taste
Oranges, segmented 90 g
Chopped red onion 90 g
Sugar 60 g
White vinegar 10 g
Method
In a small saucepan, combine the segmented oranges, white vinegar, sugar, chopped onion, and white pepper. Cook over very low heat until the liquids reduce, creating a dense but not hard compote.
Meanwhile, marinate the shelled prawns in soy sauce and sesame oil for 15 minutes.
Plating — Spoon the warm compote onto a deep dish and arrange three red prawns (drained from the marinade) on top, one of which should be coated in crunchy seeds. Garnish with a few lamb's lettuce leaves.
