From the gastronomic heart of the prawn — the heads snap-frozen to -50°C on board — comes the most authentic bisque of the Mediterranean.

During fishing, our sailors select the prawn heads naturally separated as the nets are hauled up: this is where the "gastronomic heart" of the crustacean lies. Rich in coral and flavor, it is immediately snap-frozen to -50°C on board to ensure its purity and food safety.

Through an infusion process, we transform this raw material into the most precious essence: the creamy prawn bisque by Rosso di Mazara®, enriched with extra virgin olive oil from Valle del Belìce and Trapani sea salt.

Chef's advice

Never boil it

The bisque is a delicate emulsion of prawn proteins and fats. Violent boiling risks separating the fat and losing the velvety texture.

Always heat it over very low heat or, even better, add it to the pan only during the last two minutes of pasta cooking.

The creaming trick

To achieve that irresistible creaminess seen in restaurants, you don't need cream.

Drain the pasta very al dente and finish cooking it directly in the bisque. If it dries out too much, add a tablespoon of cooking water.

Don't overpower the flavor

Mazara Red Prawn has a unique aroma. Grated cheeses or strong spices would mask the prawn's flavor.

If you want a touch of freshness, use only grated lemon zest or a pinch of white pepper.
